DOMINIO DE THARSYS Cava Brut rose

Chicago is hot as blazes, and after proper hydration (this Arizona girl takes water seriously) it’s time for rose. Dominio de Tharsys’s brut rose cava perched in my co-op’s wine fridge until it called my name, and I willingly obliged. Sharp acid hits the tongue, but with even two minutes in the glass it warmed enough to mimic a tart strawberry-lemon jam on brioche, yeasty toast. The rosy-orange color matches Medusa’s lipstick on the label, a bright siren enticement.

A bit brash for a gentle seafood dish, even a hearty salmon, but it’s hot and I want strawberry lemonade. And a rose that fits the bill with 11.5% alcohol? I’m sold.
